Vegetarian chicken and potato strips stir-fry (Vegetarians - 1 serving)

Ingredients:

Black fungus(Soaked)

Vegetarian chicken

Chinese parsley(Diced)

Potato(90g)

Carrots(Cut into strips)

Ginger(Cut into strips)

Garlic(Sliced)



Serving:

1/2 bowl

2 taels

To sprinkle

1/2 piece

Few pieces

2 slices

1 clove

Sauce:

Salt

Ground pepper

Sesame oil


Serving:

1/3 tsp

To taste

To drizzle



Method:

1. Peel and wash potato. Cut it into uniform strips and soak into chilled water for two times. Soak the strips again and ready for use

2. Cut vegetarian chicken and black fungus into strips. Set aside.

3. Pre-heat a non stick skillet with 1 tsp of oil and fry ginger strips, garlic slices and drained potato and carrot strips until softened. Then stir fry the ingredients with black fungus and vegetarian chicken. Stir in salt, ground black pepper and Chinese parsley. Removed from heat, drizzle with sesame oil and serve.
